Pine Nut and Feta Cheese Dip
Great combo of toasted pine nuts, roasted bell pepper and salty cheese!

Ingredients

toasted pine nuts,
chopped

finely chopped red bell pepper
(or roasted red pepper)

cup
finely chopped fresh parsley

crumbled feta cheese
(easiest to buy it already crumbled)

garlic clove,
minced

cup
plain nonfat yogurt
salt and pepper,
to taste
vegetables,
for dipping
Instructions
In a medium mixing bowl, combine the pine nuts, pepper and parsley.
Stir in the feta, garlic and yogurt into the bowl. Add salt and pepper to taste.
Serve with assorted veggies.
