Ingredients
SALAD:

chopped romaine lettuce

black beans,
rinsed and drained

seeded and chopped tomato

peeled and chopped jicama

fresh corn kernels
(or use canned or frozen)

thinly sliced radishes

red bell pepper,
chopped

reduced-fat crumbled feta cheese
HONEY- LIME DRESSING:

freshly squeezed lime juice

tablespoons
extra-virgin olive oil

honey

finely chopped fresh cilantro

finely chopped fresh jalapeno
Instructions
ASSEMBLE SALAD:
Toss all salad ingredients in a large bowl.
PREPARE THE DRESSING:
In separate bowl, mix dressing ingredients. Pour dressing over mixture and toss again. Season with salt and pepper to taste.
