To a blender jar, add the red wine vinegar, shallot, honey, Dijon, strawberries and salt. Process until smooth, about 30 seconds. With the blender running, gradually drizzle in the oil, processing until the vinaigrette is smooth.
ASSEMBLE THE SALAD:
On a large platter, arrange the spring mix, and top with feta, shallot, tomato, bacon and strawberries. Sprinkle with salt. Drizzle vinaigrette over the salad, and serve immediately.
