Ingredients
HONEY LEMON DRESSING:

extra virgin olive oil

lemon,
juiced

honey
freshly ground black pepper,
to taste

teaspoon
kosher salt
SALAD:

cups
mixed greens

bunch (or one bag)
arugula

tomatoes,
chopped
½
large
red onion,
thinly sliced

cup
shaved fresh Parmesan cheese
Instructions
MAKE THE DRESSING:
In a small bowl, whisk together the olive oil, lemon juice and honey. Add salt and pepper to taste.
ASSEMBLE THE SALAD:
In a large bowl, toss the salad ingredients together (through red onion). Add the dressing and lightly toss again.
Divide the salad among salad plates and garnish with shaved Parmesan cheese.
