Triple Onion Dip

I love the food surrounding game days! The Super Bowl is our biggest for sure, but there’s also the World Series, the NBA playoffs and so many more. Whether it’s for a special game or just for a small neighborhood gathering this dip is one you’re going to want to serve over and over. It gives everyone a healthier option to balance out those heavy appetizers we all love. This Triple Onion Dip comes from one of Ellie Krieger’s cookbooks: Comfort Food Fix. Ellie is my go-to-gal for light recipes that are always fabulous. 

🛒Ingredients needed:

  • olive oil
  • sweet onions
  • green onions
  • plain nonfat Greek yogurt
  • light mayonnaise
  • garlic and onion powders
  • salt and freshly ground black pepper

  1. Heat the oil in a medium nonstick skillet over medium heat. Add the sweet onion and green onion (white part only) and cook, stirring often, until golden brown and soft, about 10 minutes. Allow to cool completely.
  2. In a large bowl, stir together the onion mixture, yogurt and all remaining ingredients. Chill for 1 hour to let flavors meld (or up to 3 hours). Top with chopped green onions (green parts) just before serving. Serve with vegetables, crackers or potato chips.

  • I prefer serving this dip with fresh veggies when I’m trying to eat lighter.
  • You can cook the onions the day before and cool in the refrigerator until ready to put the rest of the dip together.
  • If you are preparing this recipe as GLUTEN-FREE, just be sure to use a brand of mayonnaise that is known to be GF.

★How to Store:

Leftover dip can be covered and stored in the refrigerator. It’s best to use it within the next 2 to 3 days.  If you happen to have a baked potato, try this dip in place of sour cream!

❤️Why I love this recipe:

  1. I really like being able to offer my guests a healthier option at parties and this dip is perfect for that.
  2. I LOVE that this dip is so rich in flavor that no one suspects it’s low fat!
  3. Though I’m not always a big fan of raw onions, when they’re cooked down it’s a whole other story. Their sweetness really comes out in the cooking process. Yum!
