I love to make this recipe for Tomato, Caper, Olive and Blue Cheese Salad at the height of fresh tomato season in the summer months.
I think that you can agree that a tomato salad is best when you are able to locate amazing, ripe tomatoes. Summer is the time for that, for sure. If you have tomatoes growing in your garden, then you are in for a treat. If not, visit your local farmer’s market to pick up the most beautiful tomatoes you can find. Heirloom tomatoes would be pretty wonderful in this tomato, caper, olive and blue cheese salad too.
Ingredients needed:
- vine ripened tomatoes
- balsamic vinegar
- extra virgin olive oil
- salt and pepper
- pitted kalamata olives
- crumbled blue cheese
- capers
- fresh basil leaves
How to make Tomato, Caper, Olive and Blue Cheese Salad:
The complete, printable recipe is at the end of this post. This is a very easy summer salad recipe to make!
- Arrange sliced tomatoes on large platter.
- Drizzle with vinegar and then oil. Sprinkle lightly with salt and generously with pepper.
- Sprinkle with the olives, blue cheese and capers. Garnish with basil leaves.
I think it goes without saying that the balsamic vinegar you use for this recipe can make a big difference too. I tend to like to use a balsamic vinegar that is a little more syrupy. We happen to a have a bottle that we picked up in Italy that I use for delicious salads like this one. If you are a lover of balsamic glaze, that can be used in this salad instead of balsamic vinegar, if you’d like.
How to make homemade Balsamic Glaze:
You only need one ingredient- balsamic vinegar to make balsamic glaze. Heat the balsamic vinegar in a small pot or saucepan over medium heat.
If you’re not into blue cheese, you can always substitute crumbled feta cheese or crumbled goat cheese in its place. And the salty kalamata olives and capers are the perfect finishing touch. Enjoy!
