Tater Tot Breakfast Casserole

My son and a bunch of his 20-something friends came into town a few weeks ago for a big golf tournament here. And they all stayed at our house. My job was to feed them! This tater tot breakfast casserole was the perfect choice for breakfast. It’s great comfort food, it’s easy to make and it’s really delicious! We love our tater tot recipes!

🛒 Ingredients Needed:

  • finely chopped ham
  • eggs
  • milk
  • onion and garlic powder
  • cheddar-jack cheese
  • frozen tater tots
  • green onion
  • salt and pepper

✏️ How to make Tater Tot Breakfast Casserole:

  1. Preheat the oven to 350℉. Spray a 9×13-inch pyrex pan with nonstick spray.
  2. Sprinkle the ham evenly into the bottom of the prepared baking pan.
  3. In a medium bowl, whisk together the eggs, milk, onion powder, salt, garlic powder and pepper. Pour the egg mixture over the top. Sprinkle on ½ of the cheese, and then add the Tater Tots evenly on top of the cheese. Cover with foil.
  4. Bake for 40 minutes, Take off the foil, sprinkle the rest of the cheese on top. And then sprinkle on the green onions. Bake for 20 minutes more. Let sit for a few minutes, then serve!

➡️ Tips and Substitutions:

  • Cooked and crumbled bacon or crumbled sausage my be substituted for the ham.
  • You can use any brand of little potatoes that are similar to tater tots.
  • Try using different types of cheese.
  • Top with sour cream, guacamole or salsa, if you’d like.

✔️ Make ahead tips:

I think this is one of those recipes that is best to prepare and bake right away. The egg might soak into the tater tots if you try to make it ahead. But you can certainly prep everything ahead of time. Chop the ham. Grate the cheese. Beat the eggs.
