Stracciatella Gelato is a favorite Italian gelato flavor! It’s a rich and delicious vanilla gelato with tiny pieces of dark chocolate mixed in.

The word “stracciatella” is used to describe three food items in Italy: a cheese made from Italian buffalo milk, a soup made with dropped eggs and an ice cream with chocolate pieces in it. In this case, of course, we’re talking about the ice cream- gelato. I’ve been to Italy many times, and I treat myself to a gelato every day when I’m there. Stracciatella gelato is always a flavor that I order- it’s so good!

This is a copycat recipe from the Italian area of Epcot. The recipe is in the The Unofficial Disney Parks Cookbook: from delicious Dole Whip to tasty Mickey Pretzels, 100 magical Disney-inspired recipes. What a fun book!  If you’ve ever been to any of the Disney Parks, then you know how delicious the food is. It’s fun to be able to make some of this stuff at home!

Ingredients needed:

  • whole milk
  • heavy whipping cream
  • white sugar
  • light corn syrup
  • vanilla extract
  • salt
  • egg yolks
  • very finely chopped dark chocolate

How to make Stracciatella Gelato:

  1. In a medium saucepan over medium heat, combine the milk, cream, sugar, corn syrup, vanilla and salt. Once the mixture starts to bubble, remove from heat.
  2. In a medium bowl, add the beaten egg yolks. Use a ladle to slowly pour a small stream of the milk mixture into the bowl while whisking continuously (slowly… you don’t want the eggs to cook and become scrambled eggs!) Continue until half of the milk mixture has been added.
  3. Return the saucepan to medium heat. Carefully and slowly pour the yolk mixture into the remaining milk mixture in the saucepan, continuing to whisk. Whisk continuously about 5 minutes while the custard thickens, then remove from heat.
  4. Pour the mixture through a sieve to remove any egg solids. Refrigerate covered for at least 1 hour (preferably overnight).

When chilled, pour into an ice cream machine. Follow manufacturer’s instructions and run for about 15 minutes. Add ¼ cup of the chopped chocolate, then run an additional 5 minutes.

Scoop the gelato into a large container or loaf pan. Sprinkle the remaining ¼ cup of chopped chocolate on top. Cover and freeze until solid- 4 hours or more.
