This simple crockpot lasagna recipe is a big hit in my house. And I’m so happy to have a slow-cooker recipe that I can use for busy days where I don’t have time to cook. How cool is it that a slow cooker can make lasagna for you? Yes. Very cool, indeed! You do not need any experience in the kitchen to make this easy crockpot lasagna recipe!

Ingredients Needed:

  • cottage cheese or ricotta cheese
  • shredded mozzarella cheese
  • jarred marinara sauce
  • lean ground beef
  • lasagna noodles- you do not need to cook them!

How to make Slow Cooker Lasagna:

  1. Place the cottage cheese and mozzarella cheese in a medium bowl and stir to combine.
  2. Add a thin layer of pasta sauce to the bottom of a slow cooker. Add a thin layer of the cooked ground beef and a layer of the noodles, breaking the noodles to make them fit. Top the noodle layer with a layer of the cheese mixture. Repeat until all of the ingredients are used, ending with a layer of sauce.
  3. Cover and cook on low for 6 to 8 hours. Serve hot.

Recipe Tips

  1. Add in frozen chopped spinach, squeezed dry. Add in chopped mushrooms. Use sausage in place of ground beef. Be creative!
  2. As the lasagna comes out of the oven, sprinkle a little more mozzarella cheese on top, as well as some chopped fresh parsley. That will make it look pretty!

    The crockpot is my friend! I love having a chicken cooking away with potatoes and carrots for an instant supper after a busy day! Close seconds would be a lasagna casserole dish, or breakfast foods for supper.

    I LOVE my slow cooker! I use it every couple of weeks. My go-to is a chicken taco stew recipe that is loaded with beans, corn, tomatoes and chicken. Everyone who has eats it asks for the recipe. It’s so easy! You throw everything in the slow cooker before you leave for work, come home and your meal is ready. I also love this stew because you can easily add your own variations and it’s low calorie, low fat and high fiber. Thanks for the slow cooker recipe! I’ll probably try it this weekend!

    My favorite go-to is actually a slow cooker meal…place 2 frozen chicken breasts in the crockpot, top with 2 cans black beans (juice and all), 1/2 cup brown rice, and all topped with 16 oz salsa of choice. Cook on low for 6-8 hours—so good! Top with cheese, more salsa, guac or even put it in a tortilla!

    Go to meal? That would be whatever meat I have left in the fridge sauteed in a skillet with taco seasoning and sliced onions and bell peppers for a fajita. Yum.
