This simple crockpot lasagna recipe is a big hit in my house. And I’m so happy to have a slow-cooker recipe that I can use for busy days where I don’t have time to cook. How cool is it that a slow cooker can make lasagna for you? Yes. Very cool, indeed! You do not need any experience in the kitchen to make this easy crockpot lasagna recipe!

Ingredients Needed:

  • cottage cheese or ricotta cheese
  • shredded mozzarella cheese
  • jarred marinara sauce
  • lean ground beef
  • lasagna noodles- you do not need to cook them!

How to make Slow Cooker Lasagna:

  1. Place the cottage cheese and mozzarella cheese in a medium bowl and stir to combine.
  2. Add a thin layer of pasta sauce to the bottom of a slow cooker. Add a thin layer of the cooked ground beef and a layer of the noodles, breaking the noodles to make them fit. Top the noodle layer with a layer of the cheese mixture. Repeat until all of the ingredients are used, ending with a layer of sauce.
  3. Cover and cook on low for 6 to 8 hours. Serve hot.

Recipe Tips

  1. Add in frozen chopped spinach, squeezed dry. Add in chopped mushrooms. Use sausage in place of ground beef. Be creative!
  2. As the lasagna comes out of the oven, sprinkle a little more mozzarella cheese on top, as well as some chopped fresh parsley. That will make it look pretty!

    If I’m alone my favorite quick go-to meal is a tuna melt and it has to include fresh onion after melting it. If the family is home and since neither will go NEAR tuna, it’s gotta be what we consider American Chop Suey (or when I was a kid what we called “Slop” lol). Elbows, sauce and ground meat with some onion and pepper thrown in.

    I’d have to say my go to supper is grilled chicken breast. It’s ready in minutes, which is important when I get home from work starving at 7:30! Then I cut it up and eat it in a salad, or make a sandwich out of it. Yum. 🙂

    My go to weeknight meal is a meat sauce using a pound of ground beef, crumbled and browned, mixed with a jar of pasta sauce and a few extra spices added in. All served over whole wheat pasta!

    One of my families favorite quick night meals is this delicious chicken dish:
    Pound thin 4 boneless,skinless chicken breasts, place in baking pan and cover each chicken with a slice of Swiss cheese. In a bowl, combine a can of cream of chicken soup with white wine or chicken stock. Your looking for a gravy consistency that you like. Pour over the chicken. Next, in a bowl place an amount you desire, of stovetop stuffing mix. Wet this with chicken stock. Place stuffing on top of the chicken and gravy. Cover with foil and bake at 350 degrees until chicken is cooked through.
