This simple crockpot lasagna recipe is a big hit in my house. And I’m so happy to have a slow-cooker recipe that I can use for busy days where I don’t have time to cook. How cool is it that a slow cooker can make lasagna for you? Yes. Very cool, indeed! You do not need any experience in the kitchen to make this easy crockpot lasagna recipe!

Ingredients Needed:

  • cottage cheese or ricotta cheese
  • shredded mozzarella cheese
  • jarred marinara sauce
  • lean ground beef
  • lasagna noodles- you do not need to cook them!

How to make Slow Cooker Lasagna:

  1. Place the cottage cheese and mozzarella cheese in a medium bowl and stir to combine.
  2. Add a thin layer of pasta sauce to the bottom of a slow cooker. Add a thin layer of the cooked ground beef and a layer of the noodles, breaking the noodles to make them fit. Top the noodle layer with a layer of the cheese mixture. Repeat until all of the ingredients are used, ending with a layer of sauce.
  3. Cover and cook on low for 6 to 8 hours. Serve hot.

Recipe Tips

  1. Add in frozen chopped spinach, squeezed dry. Add in chopped mushrooms. Use sausage in place of ground beef. Be creative!
  2. As the lasagna comes out of the oven, sprinkle a little more mozzarella cheese on top, as well as some chopped fresh parsley. That will make it look pretty!

    Mine go to would have to be sausage and potatoes. Slice smoked sausage and slice potatoes, chopped onion, garlic and sage. Pan fried with a bit of olive oil until potatoes are crisp. Good with garlic knots!

    My favorite go to recipe for a busy day is a roasted chicken from the market. Serve it with a quick salad -tomatoes and lettuce from the garden and a then some baby potatoes (they cook up fast). Going to make the crock pot lasagne tomorrow night. Thanks for sharing with us.

    I almost feel like this answer is cheating, but I just have to say for our family, the best, quickest weeknight meal is ALWAYS tacos. The hubby’s favorite dinner EVER (always the thing he says he’d eat if he had to pick only one thing to eat for the rest of his life), I love them, our 3-year-old daughter eats an entire soft taco on her own and our 1-year-old son has just gotten the hang of eating it without it falling apart too. Tacos. Win-win-win-win. 🙂

    My favorites is Chicken, Broccoli & Cheddar quiche with a green salad. Always make a couple of quiches at a time and halve them and put in the freezer to pop in the oven when needed.

    A super quick meal I can’t stop eating lately is a toasted sesame seaweed salad and grilled (or pan seared) tofu. Just rehydrate the seaweed in boiling water for a few minutes and toss with the sesame seeds, sesame oil, soy sauce, and rice wine vinegar. Super simple! And when I have extra time, I stir in some roasted shitake mushrooms. They are *amazing*, but not quick. ;p
