  • brussels sprouts
  • extra-virgin olive oil
  • kosher salt and freshly ground black pepper
  • Parmesan cheese

How to make Shredded Parmesan Brussels Sprouts:

The first thing you’ll do is shred the brussels sprouts. The easiest way to do this is to put them through a food processor that is fitted with a slicing blade. If you don’t have a food processor, use a box grater and run them through the slicer instead of the grater.

Next, you’ll spread the shredded brussels sprouts on a rimmed baking sheet and toss them with olive oil, salt and pepper. And then the shredded brussels sprouts are roasted for 30 minutes. You’ll want to give them a stir halfway through roasting.

The brussels sprouts are done when they are tender and browned in spots. You’ll be able to smell the delicious nutty flavor that’s developing while they’re roasting.

Parmesan cheese is stirred into the roasted brussels sprouts after they’re done roasting. Toss the baking sheet back into the oven for a minute or two, just until the cheese is melted.

  • Preheat the oven to 425°F.
  • In a food processor fitted with a slicing blade (or use a box shredder), coarsely shred the brussels sprouts. On a large rimmed baking sheet, toss the brussels sprouts with the olive oil, season with salt and pepper and spread in an even layer. Roast in the oven for 30 minutes, until the brussels sprouts are tender and browned in spots; rotate the pans and stir the brussels sprouts halfway through roasting. Sprinkle with the Parmesan cheese, toss and bake for 1 more minute, or until the cheese is melted. Transfer the brussels sprouts to a bowl and serve.
