Prosciutto Roasted Halibut with Fresh Thyme

If you can get your hands on some halibut, this is a great recipe to make with it. Prosciutto and halibut are a beautiful, delicious pairing. And although it sounds fancy, this prosciutto roasted halibut is actually very easy to make.

🛒Ingredients needed:

  • halibut
  • salt/pepper
  • fresh thyme
  • prosciutto 
  • olive oil
  • shallots
  • dry white wine
  • butter

✏️How to make Prosciutto Roasted Halibut:

  1. Preheat oven to 400°F.
  2. Sprinkle the fish fillets with salt and pepper, then sprinkle 1 teaspoon of thyme on top of each fillet. Place 2 slices prosciutto on work surface, overlapping slightly. Place 1 fish fillet crosswise in the center of the prosciutto; fold the prosciutto over the fish fillet (wrapped up like a blanket). Repeat with the remaining prosciutto and fish fillets.
  3. Heat the oil in a medium ovenproof skillet over medium-high heat. Add the prosciutto wrapped fish, seam-side down. Cook until the prosciutto is brown on all sides, about 1 minute per side. Transfer the skillet to the oven and roast the fish until cooked through, about 6 minutes. Transfer to plates for serving.
  4. Add the shallot to the same skillet; sauté over medium-high heat until beginning to brown, about 1 minute. Add the wine and the remaining 2 teaspoons of thyme. Simmer until the sauce is slightly reduced, about 1 minute. Whisk in the butter. Drizzle the sauce over the fish and serve.

  • Don’t worry it your wrapped halibut bundles don’t look perfect. It’s the taste that counts!
  • Be sure not to overcook. Remember overcooked fish is dry fish.
  • If preparing this recipe as gluten free, just be sure to use a brand of prosciutto that is known to be free of gluten.

✔️What to serve with Prosciutto Roasted Halibut:

  •  I love this halibut with  chilled asparagus with feta vinaigrette (pictured). The warm fish and cool asparagus is a winning combination.
  • For a more classic comfort food meal, serve it with Perfect Mashed Potatoes. The potatoes can soak up some of that delicious sauce.
  • A special meal like this one calls for a nice glass of wine. I think Prosciutto Roasted Halibut pairs nicely with a good pinot noir.
