These Pork Chops Stuffed with Smoked Gouda are a fabulous recipe to try for dinner. They’re so delicious!
Fall has just landed, but it’s not too late for grilling! These stuffed pork chops can be cooked on the grill, but they can also be cooked in a pan. I personally like the grilling method best for these. The pork chops are cut in half, so each half will grill quickly with that fabulous cheese melting inside!
Ingredients needed:
- smoked gouda cheese
- cooked and crumbled bacon
- fresh parsley
- thick, center-cut, bone-in pork chops
- olive oil
- kosher salt and freshly ground black pepper
What’s the best way to cook bacon?
I like to make bacon in the oven. It’s the easiest, cleanest way to make bacon! Preheat the oven to 400 degrees F. Line a baking sheet with foil. Lay the strips of bacon on the foil. Bake until the bacon is browned and crispy, 15 to 20 minutes. Time in the oven will depend on how thick your bacon is. Let the bacon cool and drain on a paper towel lined plate, and then chop it or break it into smaller pieces.

Pork Chops Stuffed with Smoked Gouda
Ingredients
- ½ pound smoked gouda cheese shredded
- 8 slices bacon, cooked and crumbled
- ½ cup chopped fresh parsley
- ⅙ teaspoon freshly ground black pepper
- Four 2½-inch thick center-cut, bone-in pork chops
- 2 teaspoons olive oil
- salt and ground black pepper, to taste
Instructions
- Preheat an outdoor grill to medium heat.
- In a small bowl, combine the cheese, bacon, parsley and ⅛ teaspoon of black pepper. Set aside.
- Lay a pork chop flat on a cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff the cheese mixture into the pocket, and close with a wooden toothpick.
- Brush the pork chop with oil, and season with salt and more black pepper.
- Lightly oil the grill grate. Grill over medium heat for 5 to 8 minutes on each side, or until the pork is done.
