This One Pot Sausage Pasta is an easy and delicious, family friendly comfort food dinner recipe that takes just 30 minutes to make.
What’s great about this pasta recipe is you do not have to pre-cook the pasta! Yep, it’s cooked right there in the skillet with the other ingredients. So you’re not messing up the kitchen with an extra pasta pan. That works for me. This One Pot Sausage Pasta is one super easy and yummy dinner!
This recipe for One Pot Sausage Pasta comes from my friend Ree Drummond’s newest cookbook: The Pioneer Woman Cooks Super Easy! 120 Shortcut Recipes for Dinners, Desserts, and More. This book is full of great, super easy recipes for all meals of the day, which is something I’m endlessly on the hunt for. These are recipes that don’t require a lot of prep or fuss. Ingredients needed:
- olive oil
- sweet Italian sausage
- yellow onion
- oregano, fennel seeds and red pepper flakes
- garlic
- kosher salt and freshly ground black pepper
- canned tomato purée
- canned tomato paste
- low-sodium chicken broth
- fusilli pasta
- mascarpone cheese
- grated mozzarella cheese
- Parmesan shavings
- fresh basil
How to make One Pot Sausage Pasta:
The full, printable recipe is at the end of this post. You’ll need a large, deep skillet for this recipe.
Heat olive oil in the skillet. Add the sausage, and crumble it apart. Brown the sausage (about 5 minutes). Add the onion, and cook until softened. Add the seasonings. Then add tomato purée, tomato paste and broth.
Add the uncooked pasta to the skillet, and stir. Turn the heat to low, and put the lid on the pan. Let it simmer (stirring occasionally) until the pasta has absorbed the liquid and is tender, about 20 minutes. Turn off the heat. Stir in mascarpone cheese. Then stir in mozzarella until melted.
Add the Parmesan cheese.
Add fresh basil. And it’s ready to serve!

Ingredient substitutions and notes:
- Ground beef may be substituted for the sausage.
- Penne or rotini pasta may be substituted for the fusilli pasta.
- You may substitute ricotta cheese or cream cheese for the mascarpone cheese.

One Pot Sausage Pasta
Ingredients
- 1 tablespoon olive oil
- 1 pound sweet Italian sausage, casings removed
- 1 medium yellow onion, peeled and diced
- 2 teaspoons dried oregano
- ½ teaspoon fennel seeds
- One pinch red pepper flakes
- 2 medium garlic cloves, minced
- kosher salt and freshly ground black pepper
- One 28-ounce can tomato puree
- 2 tablespoons tomato paste
- 4 cups (1 quart) low sodium chicken broth
- 1 pound fusilli pasta
- ⅓ cup mascarpone cheese
- 1½ cups grated mozzarella cheese
- ¼ cup Parmesan shavings (plus more, for serving)
- 10 to 12 fresh basil leaves (plus more, for serving)
Instructions
- In a large, deep skillet, heat the olive oil over medium heat. Add the sausage and cook and crumble it until it starts to brown, about 5 minutes.
- Add the onion and cook, stirring often, until softened and translucent and the sausage is well-browned, 5 to 7 minutes.
- Add the oregano, fennel, red pepper, garlic and salt/pepper (to taste). Stir to combine.
- Add the tomato puree, tomato paste and broth. Stir to make sure everything is well combined.
- Dump in the (dried) pasta, and stir until it's totally coated in sauce. Turn the heat to low, and put the lid on the pan. Simmer, stirring occasionally, until the pasta has absorbed the liquid and is tender- about 20 minutes.
- Turn off the heat. Add the mascarpone and stir to combine. Add the mozzarella and stir until it's melted. Add the Parmesan shavings and basil (tearing larger leaves as you add them). Garnish with more Parmesan shavings and basil, and serve right out of the pan.

I’m sure you can… but I’m not super familiar with how to convert recipes to IP.
Can’t find any of the amounts for how much to use on any of the ingredients. I really would like to make this.
