No Bake Peanut Butter Bars

This is a no bake recipe. There’s a brief stint on the stove to melt the peanut butter and chocolate (or you can use the microwave), but besides that… no oven is going to heat up your house! If you’re a peanut butter and chocolate lover, then this recipe is definitely for you. It’s like a Reeses peanut butter cup in bar-form, and it’s so good!

🛒 Ingredients Needed:

  • unsalted butter
  • graham cracker crumbs
  • powdered sugar
  • natural creamy peanut butter
  • 70% cacao dark chocolate

✏️ How to make No Bake Peanut Butter Bars:

  1. Line an 8×8-inch pan with aluminum foil or parchment paper and set it aside.
  2. In a medium-bowl, mix the melted butter, graham cracker crumbs and powdered sugar. Stir in 1 cup of peanut butter, then press the mixture evenly into the prepared pan.
  3. In a small bowl, melt the remaining 3 tablespoons of peanut butter with the chopped chocolate in the microwave or on the stove in a double boiler. Stir until smooth. Spread evenly over the peanut butter layer.
  4. Chill the bars in the refrigerator until completely firm, at least 2 hours. Allow them to sit at room temperature for 10 minutes before cutting. Serve chilled.

➡️ Tips and Substitutions:

  • You can purchase graham cracker crumbs in a box. Or if you would prefer to make your own crumbs, you can do that too. Just whir some graham crackers in a food processor. Or place them in a zip baggie and smash the heck out of it until they turn into fine crumbs.
  • Almond butter would be a great substitution for the peanut butter. Sunflower butter may work as well!
  • Why use natural peanut butter? Processed peanut butter has added oil and sugar, so it’s hard to control the flavor. You can certainly use it, but I recommend using the natural if you can swing it.

✔️ Storage Tips:

Cover any leftover bars tightly and refrigerate for up to 1 week. Take out and munch on them, as desired!
