No Bake Chocolate Peanut Butter Cookies
Ingredients
- 2 cups granulated white sugar
- ¼ cup unsweetened cocoa powder
- ½ cup (1 stick) butter
- ½ cup whole milk
- One pinch salt
- 3 cups quick-cooking oats
- ½ cup creamy peanut butter (don't use natural)
- 1 teaspoon vanilla extract
- ½ cup chocolate chips
Instructions
- Line two baking sheets with waxed paper.
- In a medium saucepan, stir together the sugar, cocoa powder, butter, milk and salt. Bring to a rolling boil, and then set the timer to boil for 1 minute.
- Stir in the oats, peanut butter and vanilla; mix well. Then stir in the chocolate chips.
- Working quickly so the batter doesn't dry out, drop by tablespoonfuls (can use a cookie scoop) onto waxed paper, and let cool.
