These Lemon Cake Mix Cookies are super easy to make, and they are lemony delicious!

Even if you’re not a baker, you will be successful in baking these cookies. They are super simple, and you only need 4 ingredients to make them. If you are a lover of lemon, you’ll love these cookies. If you need a quick and easy dessert to make and bring to any sort of function, this is it!

Ingredients needed:

  • lemon cake mix
  • Rice Krispies cereal
  • salted butter
  • egg

How to make Lemon Cake Mix Cookies:

Preheat the oven to 350°F. Line baking sheets with parchment paper.
 
In a large bowl, stir together all of the ingredients until well-combined. Shape the cookie dough into 1-inch balls and place them on the prepared baking sheets, 2-inches apart. Use the bottom of a glass to press down on each ball to flatten.
 
Bake 9 to 12 minutes, or until light golden brown at the edges.

They’ll naturally be a little scraggly around the edges. The Rice Krispies in the cookie make them that way. They also give the cookies a bit of crunch.

Cool for a few minutes, and then move to a rack to cool completely.

  • One 15.25-ounce box lemon cake mix
  • 1 cup Rice Krispies
  • ½ cup (1 stick) salted butter, melted
  • 1 large egg, slightly beaten
