My little boy turns 11 today!  It’s totally crazy.  He was just a baby… like yesterday!  The scariest part about having an 11 year old is to think that in 7 years this kid will be leaving me to go off to college.  I have just 7 years to make sure he’s molded into the best person possible to face the big, wide world on his own and make a life for himself.  Whoa.

In a related story, it was career week last week in my son’s 5th grade class.  I was invited to speak about my profession as a food writer and recipe developer, so I brought the kids some cupcakes with Cookies and Cream Frosting.  I used these cupcake recipes.  And the frosting is packed with Oreo crumbles.

The 5th graders were pretty interested in what I had to say.  I told them about how I spend my days… developing recipes, testing them, sampling them, taking pictures of them, writing about them, and being quite active on the computer.  I told them about how I got started and how hard I’ve worked to create what I have.  I told them about the fun food-related opportunities that occasionally come my way- trips to New York City, Louisiana, Mexico, Napa Valley and Italy.  And I told them about my cookbook too.  I left that classroom feeling all high and mighty and thinking that I had just about the coolest job in the world.

And then my son came home from school.  He told me about the fighter pilot.  And the engineer who worked for Disney designing the amusement park rides.  And then there was the Dad who shared a YouTube video of himself almost getting killed by a deranged elephant.  I guess my job isn’t all that exciting after all.

But my son disagreed.  He insisted that I was second favorite only to the fighter pilot.  What a sweetie.  I read through 36 thank you notes and discovered that many of the kids were excited about trying to start their own blogs and using their cameras to start taking pictures of food.  They told me that they loved my photography and that everything on my site looked delicious.  A few of them were inspired to ask their parents if they could help out more in the kitchen.  And they told me that they loved my cupcakes too 🙂

Cookies and Cream Frosting

This easy frosting recipe is such a delicious one!

Ingredients

  • 3 cups powdered sugar
  • 1 cup (2 sticks) salted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons whipping cream
  • 12 OREO cookies (or other chocolate or vanilla cookie with cream filling), crumbled finely
  • 12 to 15 additional OREOS, for garnish (optional)

Instructions 

  • In a large bowl, with a hand or stand mixer, combine the sugar and butter on low speed. Mix until well blended. Increase the speed to medium and beat for another 3 minutes.
  • Add the vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for desired spreading/piping consistency. Add the cookie crumbles and mix just until combined.
  • Scoop into a piping bag with a wide tip and pipe decoratively onto cupcakes, or spread onto cupcakes as desired. Garnish with a whole Oreo cookie (if using).

Notes

  • NOTE: nutritional information is for the FROSTING on one cupcake (not the actual cupcake), and the calories do not include an optional OREO on top of the cupcake.
