  • granulated white sugar
  • canola or vegetable oil
  • eggs
  • vanilla extract
  • all purpose flour
  • unsweetened cocoa powder
  • baking soda, baking powder and salt
  • zucchini

How to make Chocolate Zucchini Bread:

Preheat the oven to 350°F. Spray two 8×4-inch loaf pans with nonstick spray.
 
In a large bowl, use an electric mixer to beat the sugar, oil, eggs and vanilla until well-mixed. In a separate bowl, whisk together the flour, cocoa powder, salt, baking soda and baking powder. Gradually beat the sugar mixture until blended. Stir in the zucchini and the chocolate chips.
 
Bake 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before removing the loaves from the pans to cool completely.

I personally like to cut into this chocolate zucchini bread before it has totally cooled off. The chocolate chips will be kind of melted and wonderful in every bite! Can you taste the zucchini? No, you cannot taste the zucchini. Zucchini is a wonderful addition to breads because it contributes to the moisture of the bread without adding a bunch of bad calories and fat.

Wrap your chocolate zucchini bread loaf tightly in plastic wrap or foil, and then slip it into a large freezer zip baggie before storing in the freezer. Freeze for up to 6 months. Then take out and thaw when ready to eat.
