Think of these cheese pockets as mini triangular savory pies. They only take about 20 minutes to assemble. The baked puff pastry makes them flaky and crispy, and when you bite into them you’ll get a lovely cheesy surprise on the inside. They happen to be good for tiny hands too, so if you have kids around then they might like them too.

Easy Ingredient List:

  • Feta Cheese: You need crumbled feta cheese for this recipe. You can certainly use a package of already crumbled feta. I prefer to buy a chunk of feta and crumble it myself. It has so much more flavor.
  • Green Onions: Thinly slice your green onions. I like to just use the green part for these.
  • Egg: You will need one large egg and one large egg yolk. Add the extra egg white to your scrambled eggs when you make breakfast!
  • Puff Pastry: Use frozen store-bought puff pastry, and follow the instructions for defrosting the sheets.

How to make Cheese Pockets:

Preheat your oven. And then combine feta, onions and egg in a bowl.

Using a sharp knife or a pizza or pastry wheel, you’ll cut the thawed pastry into twelve 3-inch squares. Spoon a little filling into the middle of each square.

Recipe Tips

  1. Add some sun dried tomatoes to your cheese pockets!
  2. Resist the temptation to use too much filling. You don’t want them overflowing as they bake.
  3. Add a little cooked bacon to the filling!

Substitution Suggestions:

  • Use goat cheese in place of the feta cheese.
  • Use a feta/ricotta/parmesan mixture in place of the feta.
  • Turn these cheese pockets into dessert pockets, and just fill the puff pastry with Nutella or pie filling.
