A delicious fall dessert recipe: Apple Harvest Blondies
These beautiful blondie are packed with fresh apples. Little bits of cream cheese swirled into the bars make them rich and delicious.
My husband couldn’t get enough of these. He asked me to ‘please take them away!’
Apple Harvest Blondies
These blondies are a perfect fall treat!
Ingredients
- ⅔ cup unsalted butter
- 2¼ cups packed brown sugar (divided)
- 3 large eggs
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
- 2 medium apples, peeled and chopped
- 3 ounces cream cheese, frozen for 1 hour
- 2 ounces finely chopped pecans or walnuts
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F. Lightly grease a 13x9 inch baking dish.
- Melt the butter in a large microwave safe bowl (just until melted). Remove from microwave and stir in 2 cups of brown sugar. Mix well, then add eggs, flour, baking powder and vanilla. Mix just until combined. Fold in the apples.
- Spread the batter into prepared dish. Chop cream cheese into small bits and mix with nuts, cinnamon and remaining ¼ cup of brown sugar. Sprinkle evenly over the batter..
- Bake 35 to 40 minutes

i had a hard time getting the cream cheese into pieces… i think more than an hour in the freezer is needed. i’ll also chop my apples into smaller pieces next time. but oh so good!
i baked 1 dozen cupcake size and a 8×8 square pan of these…they look absolutely delicioius! i did go overboard w/the apples though–used 4 small instead of 2 medium…can’t way to give these a taste!
Very good!! I added a little more brown sugar and cream cheese and I put the batter in cupcake pans so they looked better and it made it perfect treat to grab on the go. Loved it!

these were pretty good. i used granny smith apples. dont skimp on the amount of apples and use a little more cream cheese. I read someone else said they are not pretty to look at but they are good-that is true. they can be mushy.
This was delish! Would add more cream cheese for contrast to the sweetness, but overall a great fall recipe.
