Next time you’re in the mood for some really good pasta, this is the recipe to try. I don’t know about you, but I crave comfort food in chilly weather. And this is great comfort food!

Ingredients needed:

  • ziti
  • canned fire-roasted diced tomatoes
  • onion
  • garlic
  • extra virgin olive oil
  • dry white wine
  • whipping cream
  • shredded Parmesan cheese
  • crumbled blue cheese
  • shredded Gouda cheese
  • salt and freshly ground black pepper
  • fresh Italian parsley

How to make Three Cheese Baked Ziti:

Preheat the oven to 425℉.
 
In a large saucepan, cook the pasta according to package instructions; drain. Place in an un-greased 9×13-inch baking dish. Stir in the tomatoes, and set aside.
 
Meanwhile, in a large saucepan cook the onion and garlic in hot oil over medium-heat just until tender. Carefully stir in the wine and cook for about 3 minutes or until the liquid reduces by half. Add the cream; heat to boiling. Boil gently, uncovered, about 5 minutes or until the mixture thickens slightly, stirring frequently. Remove from heat. Stir in the Parmesan cheese, blue cheese, Gouda cheese, salt and pepper.
 
Pour the cheese mixture over the pasta. Bake, covered with foil, for 30 to 35 minutes or until the sauce is bubbly. Stir the pasta to coat. Sprinkle with fresh parsley before serving.

The three cheeses in the recipe (Parmesan, blue cheese and Gouda) are a great combination of flavors. But I encourage you to try some different combinations if there is one that interests you more.

The tomatoes in the recipe balance it all out. Don’t skip them! I like to use the canned fire-roasted tomatoes for the most flavor. You can absolutely add some halved fresh cherry tomatoes in their place, if you’d like.
