Marinated Feta with Cherry Tomatoes is a great marinated mix that is perfect for topping toasted baguette slices as an appetizer.
I’ve recently transitioned to buying chunks of feta instead of crumbled feta. Crumbled is so easy for salads. But once you have chunks of feta in your salad instead, you’ll never go back to buying crumbled! It’s so creamy, delicious and salty. And it’s perfect for holding its own in a marinade for this appetizer recipe.
Ingredients needed:
- orange
- red bell pepper
- shallot
- garlic
- fresh basil
- fresh parsley
- red wine vinegar
- fresh thyme
- cayenne pepper
- kosher salt and freshly ground black pepper
- block of feta cheese
- extra virgin olive oil
- cherry tomatoes
- baguette, for serving

Use a vegetable peeler to cut two 3-inch strips of orange peel from the orange. Place those strips in a bowl. Juice the orange and add the juice to the bowl too. Add the bell pepper, shallot, garlic, basil, parsley, vinegar, thyme, cayenne, salt and pepper. Stir to combine.

Add the feta cheese to the bowl, and gently toss to fully coat with the herb mixture. Pour the olive oil over the feta and herb mixture. Stir gently to distribute and submerge the mixture in oil. Cover with plastic wrap; chill for 6 hours (or overnight).

Remove the bowl from the refrigerator, and let sit at room temperature for about 30 minutes. Add the tomatoes to the bowl.
Transfer all of it to a serving bowl. You can cover and refrigerate it at this point, if you’d like. Or you can serve it right away.
Be sure to display a bunch of toasted baguette slices for serving. For those who are eating low carb, they may wish to just spoon a bit of the mix onto a plate to enjoy.
