Frozen Caramel Toffee Ice Cream Sandwich Dessert

Let’s get a few things straight: I’m not a big fan of Cool Whip or any packaged, ready-to-eat foods, and you might not be either. I don’t normally take the easy way out when putting together desserts, but I’ve come to realize that sometimes taking the easy way out works out really, really well. With that in mind, I present to you my favorite frozen dessert recipe: this Frozen Caramel Toffee Ice Cream Sandwich Dessert. It’s the perfect sort of recipe for a summer party. It makes a TON… a good 24 to 36 servings to be exact, depending on how big you make your slices and it’s perhaps the easiest, most-decadent dessert you’ll ever make.

🛒Ingredients needed:

  • 9×13″ Deep-Dish Disposable Foil Pan: Just go with the disposable. It’s so much easier to manipulate in and out of the freezer, and it makes clean-up a breeze. Plus, the “deep dish” part is important.
  • Frozen Ice Cream Sandwiches: Look for the chocolate and vanilla ice cream sandwiches. You don’t need any fancy flavors for this dessert.
  • Cool Whip: Cool Whip will work well for this recipe instead of homemade whipped cream since Cool Whip freezes well (and whipped cream does not).
  • Caramel and Chocolate Sauces: These are the delicious sauces that will be drizzled over the top.
  • Heath or Toffee Bits: You can find these in a package near the chocolate chips.
  • Heath or Skor Candy Bars: You’ll need 4 regular-sized candy bars to chop up for the topping.

✏️How to make Frozen Caramel Toffee Ice Cream Sandwich Dessert:

*The complete, printable recipe with all ingredients and instructions is at the end of this post.

  1. Spray the foil pan with cooking spray. This is important because you don’t want a sticky mess sticking to the pan. Place 12 ice cream sandwiches side-by-side in the bottom of the pan. Just snuggle them all next to each other.
  2. Spread Cool Whip over the top of the ice cream sandwiches. Drizzle caramel and chocolate syrups over the top, and then sprinkle with the toffee bits. Place the dessert in the freezer for about an hour.
  3. Place a 2nd layer of 12 ice cream sandwiches on top of the toffee bits. Spread with more Cool Whip. Drizzle caramel and chocolate syrup on top. Sprinkle the chopped Skor/Heath bars over the top. Place the dessert in the freezer for several hours, or until firm.
  4. When ready to serve, remove from the freezer and use a sharp knife to cut into squares. Drizzle more chocolate and caramel onto individual servings, if desired.

➡️Recipe Tips:

  • You need to be sure to plan ahead when making this ice cream sandwich dessert. You want to give it several hours in the freezer after assembling it because everything needs to firm up a bit.
  • If toffee isn’t your thing, you could try using a different type of candy. I think Reese’s Peanut Butter Cups with peanut butter chips could be delicious.
  • The deep foil pan is a necessity. Your normal 9×13″ pan just won’t be deep enough to hold all the delicious layers.
  • A major bonus of this frozen ice cream dessert recipe is that you can take the servings that you need out of the pan, and then you can pop the pan right back into the freezer (with plastic wrap on top). It’s the kind of dessert that can span a couple of weekends because it’s just in the freezer and ready to go!

✔️What to do with Frozen Caramel Toffee Ice Cream Sandwich Dessert:

  • Obviously, this is the perfect ending to a summer barbecue. It’s delicious, decadent and impressive enough to serve up at a party. We slice this up and put it into plastic cups for easy serving. Put all of the cups on a large tray and pass them around to guests, who will snatch them up eagerly!
  • If you’re having a smaller gathering, divide the ingredients in half and make in two smaller pans. You’ll have one for your family and you can share the other with neighbors or friends.
  • Since this is a hit with kids, too, think about serving it up at a birthday party instead of the traditional cake.

★How to Store:

Store this dessert in the freezer, of course!

So easy and quite delicious! I used homemade caramel sauce and only 2 candy bars for topping.

I’m curious….you said you serve these in plastic cups.. What kind of cups do you use? It seems like it would be hard to place the tall serving into a cup! I would like to put them in individual cups too. It would make it soooo much easier to serve! And so much cuter than a dish.

    1. Lori Lange says:

I believe I just used the short, clear plastic cups that you can find in your grocery store!

Why didn’t you use real whipped cream? It freezes well.
