These Snickerdoodle Pudding Cookies are a real treat for Snickerdoodle lovers. Are you one of them?
I’ll be biting my fake fingernails all day today. My 12 year old is starting 7th grade. And if that isn’t bad enough, he’s starting at a brand-new school in a brand-new city. I’d be scared to death myself, but the kiddo seems okay with it. He hasn’t thrown us under the bus for moving him away from all of his friends back in San Diego (yet) and he’s not complaining about riding the bus and having to figure out how to make friends. He has really been great about it all. I’m probably waaaaaayyyy more nervous than he is. So for this monumental occasion, I made some homemade cookies for him to take in his lunch. Snickerdoodles are one of our favorites, so that’s what I made- a semi-soft and delicious sort of snickerdoodle with vanilla pudding incorporated into it.
I had been seeing recipes for “pudding cookies” all over the internet, but my friend Maria from Two Peas and Their Pod seems to make them quite often, so I based this recipe off of her Vanilla Pudding Chocolate Chip Cookie recipe. Maria is pretty much QUEEN OF COOKIES, so I figured she was the one who knew how to do these pudding cookies best. I was right. These cookies rock. All family members confirmed that.
So while I sit at home today and wonder if my boy is making friends, finding his classes, enjoying his teachers and eating lunch by himself or with new friends… I’ll be munching on cookies and milk and running on the treadmill to take my nervousness away. And I can feel a little bit better knowing that I tucked homemade cookies in his lunch too. These cookies are a wonderful snickerdoodle knock-off- all of the flavors of a snickerdoodle cookie with a semi-soft, luxurious texture and added cinnamon chips too. Cinnamon chips can be found in the same place where you find regular chocolate chips (unless you have a lame grocery store… then you’ll need to talk to the management and try to persuade them to order them. For the record, they’re usually happy to accommodate you like that.)
Snickerdoodle Pudding Cookies
Ingredients
- 1 cup (2 sticks) unsalted butter, at room temperature
- ¾ cup packed brown sugar
- ¼ cup granulated white sugar
- One 3.4 ounce package vanilla instant pudding (dry)
- 2 large eggs
- 1 teaspoon vanilla extract
- 2¼ cups all purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups cinnamon chips
- ¼ cup granulated white sugar
- ½ teaspoon ground cinnamon (mixed into the sugar)
Instructions
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silpat mats.
- In a large bowl, use an electric mixer to combine the butter and sugars until creamy. Mix in the pudding, eggs and vanilla.
- In a separate bowl, whisk together the dry ingredients: flour, cream of tartar, baking soda and salt. Add the dry ingredients to the wet ingredients and mix until well combined. Stir in the cinnamon chips.
- In a small bowl mix the sugar and cinnamon.
- Scoop out spoonfuls of the cookie dough and roll into balls. Roll in the cinnamon sugar mixture and place on the baking sheets 2 inches apart. Bake 10 to 12 minutes, or until lightly browned and set in the middle. Let the cookies cool on the baking sheet for about 10 minutes before moving to a cooling rack to cool completely.

Hello Lori, well I made these today. With one minor goof!! I used red hot chips instead of the cinnamon chips!!! Ugh – what was I thinking. Oh yeah I wasn’t!! But actually other than being a bit crunchy with the red hots they are tasty. I can only imagine with the cinnamon chips (which, by the way, I did have, so who knows why I grabbed the cinnamon red hots!!). But they are for giveaway to the our missionaries so I’ll take them to church tomorrow and the missionaries will love them!! Thank you for a wonderful recipe!! I will make again only this time use the right chips!!!
