I love to make this recipe for Tomato, Caper, Olive and Blue Cheese Salad at the height of fresh tomato season in the summer months.

I think that you can agree that a tomato salad is best when you are able to locate amazing, ripe tomatoes. Summer is the time for that, for sure. If you have tomatoes growing in your garden, then you are in for a treat. If not, visit your local farmer’s market to pick up the most beautiful tomatoes you can find. Heirloom tomatoes would be pretty wonderful in this tomato, caper, olive and blue cheese salad too.

I think it goes without saying that the balsamic vinegar you use for this recipe can make a big difference too. I tend to like to use a balsamic vinegar that is a little more syrupy. We happen to a have a bottle that we picked up in Italy that I use for delicious salads like this one. If you are a lover of balsamic glaze, that can be used in this salad instead of balsamic vinegar, if you’d like.

How to make homemade Balsamic Glaze:

You only need one ingredient- balsamic vinegar to make balsamic glaze. Heat the balsamic vinegar in a small pot or saucepan over medium heat.

To make 1/4 cup balsamic glaze, bring 1 cup vinegar to a gentle boil, then reduce the heat to medium-low heat and let simmer, stirring occasionally, until the vinegar thickens and is reduced to about 1/4 cup (about 20 minutes). It should be thick enough to coat the back of a spoon. Remove from heat and allow to cool completely before serving (about 15 minutes).

If you’re not into blue cheese, you can always substitute crumbled feta cheese or crumbled goat cheese in its place. And the salty kalamata olives and capers are the perfect finishing touch. Enjoy!
