Seared Jumbo Scallops over Spinach

When you’re looking for something new to cook for you and one other person, this is a great recipe to try. Or, consider making it all for yourself and eating it two nights in a row. 

🛒Ingredients needed:

  • scallops
  • sesame oil
  • fresh spinach
  • salt and pepper
  • white sugar
  • green onions
  • garlic

✏️How to make Seared Jumbo Scallops over Spinach:

  1. Rinse the scallops and pat dry.
  2. Heat 1 tablespoon sesame oil in a large nonstick skillet. Pan-fry both sides of scallops in a non-stick pan until golden brown. Set aside and wrap in a piece of foil to keep warm. Wipe out the pan with paper towels.
  3. Heat the remaining tablespoon of sesame oil in the pan. Add the spinach and all remaining ingredients. Drain any excess liquid and divide the spinach mixture between two plates. Place the scallops on the spinach, sprinkle with salt and pepper, as desired, and serve immediately.

 

➡️Recipe Tips:

  • Always ask to smell scallops before buying. They should smell somewhat briny and seaweed like, but not offensive. If the scallops have no smell and a uniform, bright white color, chances are they’ve been soaked in something undesirable.
  • Cook scallops the same day you buy them, if possible.
  • I always like to use baby spinach because the stems are smaller and more tender.

✔️What to serve with Seared Scallops and Spinach:

  • This is really a meal in itself. I think it would be perfect with a bottle of Sauvignon Blanc and a warm baguette. 
  • If you want a little more heft to the meal add some Brown Butter Rice
  • A decadent dessert like my Chocolate Glazed Chocolate Tart would be a perfect ending to this meal.

Ingredients
