Grilled Salmon with Dill Pickle Butter is a delicious and unique salmon recipe that you must try!

Yes, this salmon recipe involves dill pickles! Don’t let that scare you. Lots of salmon recipes are made with fresh dill. This one is made with dill pickles instead! It’s a neat idea that I discovered in an old Food and Wine magazine back in 2008. And it’s a yummy way to make salmon, so we have made grilled salmon with dill pickle butter many times now.

Ingredients needed:

  • unsalted butter
  • dill pickles
  • fresh tarragon
  • Dijon mustard
  • salt and freshly ground black pepper
  • salmon fillets
  • olive oil

How to make Grilled Salmon with Dill Pickle Butter:

The complete, printable recipe is at the end of this post. Preheat your grill to medium-heat.

In a small bowl, combine the butter with the pickles, tarragon, Dijon and pepper.

Rub the salmon with olive oil and season with salt and pepper. Grill over moderately high heat, skin-side-down, until the skin is lightly charred and crisp, about 3 minutes. Using a metal spatula, turn the fillets and grill until barely done in the center, about 4 minutes longer.

Transfer the salmon to a serving platter or plates. Top with dill pickle butter and serve. Enjoy!

The dill pickle butter melts into the salmon, which will be fresh off the grill.

This recipe calls for using fresh tarragon, but if you really want to “dill things up,” you can choose to use fresh dill in the butter instead of tarragon. I personally like having both of the flavors in there instead of just dill, but it’s up to you!

I suggest you serve grilled salmon with dill pickle butter with some simply sautéed tomatoes and corn or my fresh corn and tomato salad. And if you’re really a lover of dill pickles, you might consider making my dill pickle potato salad too!
