This super simple recipe for Greek Spaghetti is a delicious and different way to eat pasta for dinner!

I think that’s called a ringing endorsement!  This Greek spaghetti is one that we make often at my house. It’s delish!

Ingredients needed:

  • olive oil
  • dried oregano
  • garlic
  • diced tomatoes
  • green onions
  • fresh parsley
  • freshly squeezed lemon juice
  • hot, cooked thin spaghetti
  • crumbled feta cheese
  • freshly ground black pepper
  • lemon slices and more green onion, for garnish (optional)

How to make Greek Spaghetti:

Heat the olive oil in a large nonstick skillet over medium-high heat. Add the oregano and garlic and sauté for 30 seconds. Add the tomatoes, green onions, 2 tablespoons parsley, and lemon juice. Cook for 2 minutes or until thoroughly heated.
 
Combine the tomato mixture with the hot, cooked spaghetti and ¾ cup crumbled feta cheese.

Toss gently to combine the ingredients.

Top the Greek Spaghetti with the remaining cheese crumbles and parsley. It’s ready to serve!

Is this an authentic Greek recipe?

No, it is not. It simply has Greek flavors of lemon, parsley, oregano, garlic, tomato and feta cheese. It’s “Greek inspired,” how’s that?

Individual servings should be served with a couple of twists of freshly ground pepper. Taste to see if you want to add salt or not. Feta cheese is pretty salty, so you may find that you don’t want any additional salt. Garnish the plates with lemon slices and chopped green onion, if you’d like. Enjoy!

This recipe originally came from Cooking Light magazine. It’s not meant to be a pasta meal that’s covered with rich sauce (or sauce of any kind). This is pasta that is tossed with some pretty fresh ingredients. So it’s a little different than pasta dishes that you may be used to eating. We absolutely love having it for dinner at my house.
