This Grilled Lemon Mustard Chicken with a no-oil marinade turns out a surprisingly tender and moist chicken!
Grilled Lemon Mustard Chicken
This is such a great chicken recipe to make for a barbecue. I like to pound out the breasts a little bit so they’re thinner and more even, and they don’t take as long to cook on the grill. Guests like to have a healthy option available, and this one is definitely healthy!
🛒Ingredients needed:
- lemon zest and juice
- Dijon mustard
- fresh herbs
- kosher salt and freshly ground black pepper

Combine marinade ingredients in a large freezer zip baggie, mixing well.

Add chicken breasts to baggie and marinate in the refrigerator for 2 to 4 hours.

Preheat grill to medium high heat. Remove chicken from marinade and grill 3 inches from heat for 6 to 8 minutes on each side.

Place on individual plates or on a platter surrounded by parsley sprigs, lemon slices and fresh herb leaves.

- Chicken grills best when it’s all an even size.so pound out the breasts a little bit so they’re more even and a little thinner. That way they don’t take as long to cook on the grill, making for moister chicken.
- If you nedd to mix this up in the morning and leave it all day. Don’t worry about it. The flavors will be every bit as good. (Maybe even better!)
- Don’t be afraid to experiment with the herbs you add. Just pick 2 or 3 of your favorites and toss them in the marinade,

- Once the grill is fired up, I like to use it for as much of the meal as possible. Put your favorite fresh seasonal vegetables on skewer and grill them alongside th chicken. I like mushrooms, bell peppers and zucchini for this.
- You can also use the grill to make everyone’s favorite: garlic bread!
- The grill won’t work for Classic Rice Pilaf, but I love it paired with the Dijon and lemon flavors in this dish.

- ¼ cup finely chopped fresh herbs (any combo of rosemary, thyme, basil, oregano and parsley)
