I love this good-for-you chicken recipe, and it’s super simple to make, plus the flavors are incredible. I didn’t come to to be a fan of feta cheese until I was well into adulthood, but now I love its creamy salty flavor that goes perfectly with many different foods. This recipe combines feta with chicken and tomatoes. A classic!

🛒Ingredients needed:

  • tomato paste
  • red wine vinegar
  • dried rosemary and oregano
  • paprika
  • salt and freshly ground pepper
  • chicken breasts
  • plum tomato
  • crumbled feta cheese

  1. In a small bowl, stir together the tomato paste, vinegar, rosemary, oregano, paprika, salt and pepper. Rub the mixture onto the chicken breasts and set aside.
  2. Preheat the broiler. Broil the chicken 6 inches from the heat, turning once- 6 to 8 minutes per side.
  3. Top the chicken with tomato slices and broil for 1 to 2 minutes. Top with the feta and broil until the feta browns slightly .
  4. Serve immediately.

➡️Recipe Tips:

  • You may also substitute goat cheese or shredded Monterey Jack cheese.
  • I think feta cheese tastes best in the blocks. I like to buy those and then crumble them myself.
  • For more even cooking, pound out your chicken breasts until they are of an even thickness.
  • The very best way to make this is to use the very best tomatoes you can find. If you find yourself in the middle of winter, good tomatoes are more difficult to find. I recommend Campari tomatoes. They’re the kind that markets sell in a little package, and they usually have good flavor all year long.

 

✔️What to serve with Feta Topped Broiled Chicken:

  • I like this chicken served with Roasted Asparagus.
  • Serving it on top of creamy polenta or Brown Butter Rice are both delicious.
  • Lots of different wines pair nicely with this dish. For white try a pinot gris or if you want red, a Malbec would be nice.

  2. When I can get really good fresh tomatoes, this recipe is company worthy.

    I substituted apple cider vinegar for the regular red vinegar. (Candida) I added olive oil and salt. I very much enjoyed. Thank you for sharing.
