Here’s an easy recipe to make for a weekend morning:  Banana Coffee Cake with Streusel Topping

Banana Coffee Cake

I’m guilty of over-buying bananas, and it turns out that I totally do it on purpose.  I eat a banana almost every single day, but I only like them when they’re perfect- when they’ve just lost all of their green and before any black spots appear.  As soon as those black spots appear, the bananas are added to my “banana bread basket.”  It’s a place where my ripe bananas can continue to blacken and ripen until they’re so sweet and perfect for baking.

Banana Coffee Cake Recipe

Last weekend, I opted to do a little something different and make a small banana coffee cake with a sugary streusel topping.

The streusel topping is what really made it delicious.  There’s nothing like adding a little more cinnamony sugar on top of an already good cake.

This coffee cake turned out tender and moist.  My son and his buddy chowed down on it after a late-night sleepover.  And it was a nice change from making ho-hum banana bread too.

Although this cake is called Banana Coffee cake there is no mention of coffee in the recipe. How much coffee powder is required and does it get added to the cake mix or the Streusel?

    1. Lori Lange says:

“Coffee Cake” is a term used to describe a cake that is good to eat with coffee. There is no coffee in the cake 🙂

  2. Emily says:

Could I double this and make it in a 9×13 pan? Would I need to adjust the baking time/temp?

    1. Lori Lange says:

Probably, and yes… I would imagine you would need to bake longer. Haven’t tried it myself, so you’d just need to keep an eye on it.

I made this yesterday and I’m having a piece right now for breakfast with some coffee. Delicious. I used 2 large bananas and had exactly a cup!  I baked for 30 minutes. I added some chopped candied pecans (trader joes) to streusel topping.  Other wise, followed your directions. So good!  Thanks

I overbuy bananas too! In fact, I think I have some super ripe ones on my kitchen counter right now! This recipe looks great…can’t wait to make it for my husband and son! Thanks!

Putting streusel topping on banana bread is brilliant. I can taste this with my coffee already. Thanks for the recipe.

I ALWAYS over buy bananas. This is such a great idea – that streusel is calling my name.
