White, fluffy rice is a great side dish for dinner. But if you want to make rice that tastes just a little different and actually has some flavor to it, try making this easy coconut rice recipe instead. It’s not hard to make!
We aren’t super into coconut at my house, but we all love this coconut rice because it’s not heavy on the coconut flavor. It’s just a light touch of coconut. It’s delicious with pepper steak, paprika chicken and baked salmon with creamy coconut ginger sauce.
Ingredients needed:
- canned light coconut milk
- water
- white rice
- green onions, optional
- toasted coconut, optional

Heat coconut milk and water in a saucepan. Bring to a boil. Stir in the rice, cover the pan and reduce the heat to a simmer. Cook for 20 to 25 minutes, until the rice has absorbed the liquid and the rice is light and fluffy.
As written, this easy coconut rice is a super simple rice recipe. If you’d like to garnish it and make it pretty, add some chopped green onion and/or toasted coconut. That’s totally optional.

Easy Coconut Rice
Ingredients
- One 13.66-ounce can light coconut milk
- 1¼ cups water
- 1½ cups white rice
- ¼ cup chopped green onion
- toasted coconut, optional
Instructions
- In a medium saucepan, bring the coconut milk and water to a boil. Stir in the rice and cover the pan. Reduce heat to a simmer and cook for 20 to 25 minutes, or until the rice has absorbed the liquid and is light and fluffy.
- For serving, top with green onions. Add toasted coconut too, if desired.
