Prosciutto- Roasted Halibut with Fresh Thyme

Prosciutto- Roasted Halibut w/ Fresh Thyme


4 (5-ounce) halibut fillets
salt and pepper
1 1/2 Tablespoons freshly chopped thyme, divided
8 thin slices of prosciutto
1 Tablespoon olive oil
1/4 cup chopped shallots
1/2 cup dry white wine
2 Tablespoons butter


1. Preheat oven to 400°F.

2. Sprinkle fish fillets with salt and pepper. Sprinkle 1 teaspoon thyme on top of each fillet. Place 2 slices prosciutto on work surface, overlapping slightly. Place 1 fish fillet crosswise in center of prosciutto; fold prosciutto over fish fillet (wrapped up like a blanket). Repeat with remaining prosciutto and fish fillets.

3. Heat oil in medium ovenproof skillet over medium-high heat. Add prosciutto-wrapped fish, seam-side down. Cook until prosciutto is brown on all sides, about 1 minute per side. Transfer skillet to oven and roast fish until cooked through, about 6 minutes. Transfer to plates.

4. Add shallot to same skillet; sauté over medium-high heat until beginning to brown, about 1 minute. Add wine and remaining 2 teaspoons thyme. Simmer until sauce is slightly reduced, about 1 minute. Whisk in butter. Drizzle sauce over fish and serve.


*If preparing this recipe as gluten free, just be sure to use a brand of prosciutto that is known to be free of gluten.
