This Autumn Apple and Spinach Salad is a delicious, lighter choice for a salad. I love to make this salad in the fall when I’m making a yummy fall dinner like orange cranberry glazed pork tenderloin or smoked pork chops with maple baked apples.

This light and fresh salad includes the crunch of apples and the tangy flavor of crumbled blue cheese.  It’s the perfect fall-themed salad recipe. It’s also really delicious made with fresh pears instead of apples.

Ingredients needed:

  • freshly squeezed orange juice
  • freshly squeezed lime juice
  • Dijon mustard
  • honey
  • salt and freshly ground black pepper
  • red onion
  • baby spinach
  • apples
  • crumbled blue cheese

How to make Autumn Apple and Spinach Salad:

In a small bowl, whisk together the dressing ingredients and set aside. In a large bowl, combine the onion, spinach and apple. Drizzle with dressing; toss gently to coat. Sprinkle salad with the blue cheese. That’s it! Enjoy!

Ingredients

DRESSING:

SALAD:

  • ½ cup thinly, vertically sliced red onion
  • 8 cups bagged (about 8 ounces) pre-washed baby spinach
  • 1 large firm, sweet-tart apple, cored and thinly sliced
  • ¼ cup (about 1 ounce) crumbled blue cheese

Instructions 

  • In a small bowl, whisk together the dressing ingredients and set aside.
  • In a large bowl, combine the onion, spinach and apple. Drizzle with dressing; toss gently to coat. Sprinkle salad with the blue cheese.

    LOVED this recipe. I made it for book club and it was a success. It was a perfect side to the quiche that the hostess made. The tangy dressing along with the blue cheese and sweet tart apple was a great combination. I was a little concerned that the salad dressing didn’t have any oil, but it turned out to be nice and light. Thanks for the recipe.
