Find a gluten free flour baking blend that you really like… one that works well with making cookies.  And use that for this recipe.  I happen to really like the Cup4Cup Gluten Free Flour brand, but unfortunately it contains dairy… so don’t use Cup4Cup if you cannot have dairy.  King Arthur Gluten Free Measure for Measure Flour is a good one to use for baking that is both gluten free and dairy free.

Both of those brands are available at some regular grocery stores and specialty markets like Whole Foods.  Or you can order either of them on Amazon and have them delivered to your door.  

What’s the best Dairy free margarine?

My favorite brand of dairy free, gluten free margarine to use in baking is Earth Balance Original.  Blue Bonnet Lactose Free Sticks are good for baking too.  Both of those brands act as good substitutes for butter and give these Gluten Free Dairy Free Peanut Butter Cookies a nice texture.  If you don’t need to avoid dairy, it’s okay to use regular butter in this recipe.

Is peanut butter gluten and dairy free?

Regular peanut butter doesn’t contain any dairy since there are very few ingredients that make up peanut butter: peanuts, salt, oil and very little else, if anything.  There are certain companies who state that their peanut butter is gluten free, and sometimes there is a “gluten free” indication directly on the label.  

Here are a few brands of peanut butter that should be safe to eat gluten free (but always double check because things do change sometimes in the manufacturing process):  Justin’s, Reese’s, Jif and Skippy.  There are more, but these are the more mainstream brands that you might recognize.

Super easy gluten free peanut butter cookies

This recipe couldn’t be any easier.  Just combine the peanut butter and butter.  Then add the sugars, eggs and vanilla. And finally, add the dry ingredients: gluten free flour, baking powder and baking soda.  

Roll the dough into balls, and use a fork to criss-cross them on cookie sheets.  Bake for 10 minutes, and that’s it!  These cookies are delicious, even if you don’t need to follow a gluten free, dairy free diet.

  • Preheat the oven to 375 degrees F. Line baking sheets with silpat mats or parchment paper.
  • In a large bowl, use an electric mixer to combine the peanut butter and margarine. Mix in the sugars, then mix in the eggs and vanilla. In a medium bowl, whisk together the flour, baking powder and baking soda. Mix in the dry ingredients, just until combined.
  • Roll tablespoonfuls of dough into balls and place them on the baking sheet (leave about 2 inches between each ball of dough). Use a fork to crisscross the ball of dough and gently press down.
  • Bake 9 to 10 minutes, just until the cookies are looking a little golden on the edges. Let them cool for about 10 minutes before removing them from the cookie sheets. Store in a covered container, or freeze for munching later.
