Brie and Canadian Bacon Quiche is a delicious, low carb quiche made with an alternative crust.

After eating so heavy during the holidays, it’s nice to have a few recipes on hand that are a little bit lighter. This is one of those recipes!  Quiche is traditionally made with crust (like my Swiss and Cheddar Quiche), but this quiche is made using Canadian bacon as the crust. So all of those carbs you get from regular pie crust are not present in this Brie and Canadian Bacon Quiche.

Ingredients needed:

  • slices of Canadian Bacon
  • eggs
  • mayonnaise
  • brie cheese
  • Parmesan cheese
  • Italian seasoning
  • white pepper

How to make Brie and Canadian Bacon Quiche:

Line a pie plate with Canadian bacon slices. This is going to be the alternative crust for the quiche, and it’s what helps make this recipe much lower carb than a traditional quiche such as Quiche Lorraine. You won’t miss the regular crust in this quiche- I promise!

Next, the egg batter is combined. This is a mixture of eggs, mayonnaise, chunks of brie cheese, Parmesan cheese, Italian seasoning and white pepper. The mayonnaise in the quiche is what’s going to help keep it nice and moist. You can use light mayonnaise, if you’d like.

A quick, 30-minute bake in the oven, and the quiche is done. I like to make this on the weekend and eat leftovers for lunch on the days following. Brie and Canadian Bacon quiche is a nice quiche to have for breakfast or brunch, but it’s also good for lunch. Serve a side salad and a glass of white wine with your quiche to make it a complete meal (and pretend like you’re in France!)

Slice and serve. The egg custard has Parmesan cheese throughout and spots of melted brie cheese too. It’s the perfect way to eat a low carb breakfast in the New Year. Enjoy!

Brie and Canadian Bacon Quiche

Instructions 

  • Preheat the oven to 375°F. Coat a 9-inch pie plate with cooking spray.
  • Place the Canadian bacon slices, slightly overlapping, around the side and the bottom of the prepared pie plate. Set aside.
  • In a medium bowl, combine the eggs, mayonnaise, Parmesan cheese, Brie, Italian seasoning and white pepper. Pour the mixture into the pie plate over the bacon. Bake for 30 minutes. After 15 minutes of baking, place foil over the quiche to protect it from overcooking and drying out.
  • Slice and serve.

Notes

  • If you are preparing this recipe as gluten-free, just make sure that the Canadian bacon and Mayonnaise are gluten-free.
