Apple Spinach Chicken

This is such a simple chicken recipe, but I love its combination of apples and spinach and a simple sauce. If you’re eating light, or if you just need a lighter dinner option after the holidays, try this chicken! 🛒Ingredients needed:

  • vegetable or canola oil
  • chicken breast
  • salt and freshly ground black pepper
  • garlic
  • spicy brown mustard
  • apple cider
  • Granny Smith apple
  • baby spinach or Swiss chard

✏️How to make Apple Spinach Chicken:

  1. Heat the oil in a large nonstick skillet over medium-high heat. Sprinkle the chicken with salt and pepper, and add to the skillet. Cook 5 to 6 minutes on each side or until well-browned. Remove to a plate. Cover and keep warm.
  2. Add the garlic, mustard, cider and apples to pan; bring to a boil. Reduce heat, simmer, stirring often for about 5 minutes. Return the chicken and juices to the pan. Cook, stirring occasionally, until the sauce thickens and the chicken is cooked through, about 3 minutes.
  3. Add the spinach to the pan, and toss until wilted, about 1 minute.
  4. Serve the chicken and apples hot over the wilted spinach. Drizzle the whole thing with sauce!

This isn’t a heavy recipe with a heavy cream sauce or anything like that. Expect something light and flavorful. Sometimes it’s nice to eat something that tastes delicious and is good for you.

  • Firm apples with a lot of flavor work best in this dish.
  • If Granny Smiths aren’t your favorite, substitute with a variety that is.
  • For finicky eaters, you can skip the spinach and serve with rice instead.
